cupscakes

 Ingredientes para cups de zanahorias

1 1/2 cup oil,  3 cups grated carrots, 2 cups sugar, 4 eggs beaten, 2 cups cake flour,  1/2 tsp salt, 2 tsp baking soda, 1 tsp.cinnamon, 1 ts vanilla, 1 cup nuts chopped, 1/2 to 3/4 cup coconut.   Optional - cupcakes liners or grease using non stick spray for the molds. Preheat oven to 350F.
Beat oil, sugar,eggs,vanilla,nuts,vanilla,coconut, and carrots for 5 mins. 
Add remaining ingredients,beat until smooth.  Pour into well greased and floured cupscake.  Bake in preheated 350 deg. oven for 20-25 minutes or until a toothpick comes out clean. Do not over-bake. Remove from oven and let cool completely before frosting.   
Frosting  --1/4 pound butter or margarine,1 cup confectioners' sugar,1 cup evaporated milk,    1 tsp vanilla, 3 egg yolks, 1 and 1/4 cups coconut, 1 cup chopped nuts (I like  6 ounces cream cheese-room temperature)
Mix butter, sugar,milk,vanilla and egg yolks together over medium heat until mixture thickens, about 12 min. (use true evaporated milk, not use non dairy milk) Add coconut and nuts. Beat until cool and spread on cake.
